  • 2 1/2 ripe bananas, mashed
  • 5 eggs
  • 2 tbsp coconut oil or vegetable oil
  • 1 tsp vanilla
  • 1 cup Robin Hood® Coconut Flour
  • 1/3 cup coconut or white sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips, chopped nuts, shredded coconut, optional

  • Preheat the oven to 350°F (180°C). Grease an 8 1/2” x 4 1/2” (22cm x 11cm) loaf pan and line with parchment paper.
  • Combine bananas, eggs, oil, and vanilla in medium bowl. Stir in remaining ingredients. Batter will thicken.
  • Pour into prepared pan. Smooth top. Bake in preheated oven 45-50 minutes or until top cracks and feels firm. Turn oven off and allow loaf to cool completely in oven.
