  • 2 2/3 cups Robin Hood® Original All Purpose Flour
  • 1 tbsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 1/4 cups granulated sugar
  • 3 eggs
  • 1 1/2 cups mashed banana
  • 1 cup buttermilk
  • 3/4 cup mini semi-sweet chocolate chips
  • Icing
  • 1/2 cup butter, softened
  • 1/3 cup mashed bananas
  • 3 cups icing sugar, sifted

  • Preheat oven to 350°F (180°C). Grease a 13” x 9” (3 L) baking dish.
  • Bake in preheated oven 40 to 45 minutes, or until toothpick inserted comes out clean. Cool in pan on wire rack.
  • Icing: Beat all ingredients together in a small mixing bowl until smooth. Spread on cake.
  • Cake: Combine flour, baking powder, baking soda, and salt in a large mixing bowl. Cream butter and sugar in a separate large mixing bowl until light and fluffy in texture. Add eggs, one at a time, beating thoroughly after each. Add banana. Mix well. Add flour mixture to egg mixture, alternating with buttermilk, mixing lightly after each. Stir in chocolate chips. Spread batter evenly in prepared baking dish.
