Pack these easy-to-make muffins for your next picnic. Grated carrots add texture to Banana Flavoured Quick Bread Mix, making for a tasty snack.


1 pkg Robin Hood® Banana or Gluten Free Banana Flavoured Quick Bread Mix
1 tsp 5 mL cinnamon
¼ tsp 1 mL nutmeg
1 cup 250 mL unflavoured yogurt
1/3 cup 75 mL Crisco® Vegetable or Canola Oil
2 eggs
1 cup 250 mL finely grated carrots


  1. Preheat oven to 375°F (190°C).  Grease or line muffin cups with paper liners.
  2. Combine quick bread mix, cinnamon and nutmeg in a large mixing bowl.  Stir to combine. Mix in yogurt, oil and eggs until combined. Stir in carrots.
  3. Spoon batter into prepared muffin cups.
  4. Bake in preheated oven 20 to 22 minutes or until toothpick inserted in center of muffin comes out clean. Cool for 5 minutes in pan on wire cooling rack. Remove from pan and continue cooling on wire cooling rack.
