Oat Pancakes

These fluffy pancakes are so easy to make, you'll want to cook them up every weekend. Serve them with a pat of butter and covered in rich maple syrup.

Ingredients

1 1/2 cups 375 mL Robin Hood®  Oats
2 cups 500 mL milk
3 eggs
1/4 cup 50 mL Crisco® Canola Oil
1 cup 250 mL Robin Hood All Purpose Whole Wheat Flour
2 tbsp 30 mL brown sugar
2 tbsp 30 mL baking powder
3/4 tsp 3 mL salt
t tbsp 15 mL butter

Directions

  1. Mix oats and milk in small bowl. Set aside for 10 minutes.
  2. Add eggs and oil, in a separate large bowl and mix well. Add remaining ingredients and mix until smooth.
  3. Add oat mixture to flour mixture all at once, mixing until smooth.
  4. Melt butter over medium heat in large skillet. Drop in batter by 1/4 cupfuls (50 mL). Cook until bubbles appear on surface. Turn and cook other side until golden. Serve hot with cinnamon, honey, butter or maple syrup.
