Grapefruit Squares with Berries

1 ½ cups 375 mL Robin Hood® Original All Purpose Flour
½ cup 125 mL icing sugar
¼ tsp 1 mL salt
¾ cup 175 mL cold butter, grated


4 eggs
1 cup 250 mL sugar
½ cup 125 mL grapefruit juice
1 ½ cups 375 mL Robin Hood® Original All Purpose Flour
½ tsp 2 mL baking powder
2 tbsp 30 mL grapefruit zest
2 cups 500 mL berries


1 cup 250 mL icing sugar
2-3 tbsp 30 – 45mL grapefruit juice


  1. Preheat oven to 350°F (180°C). Grease and line a 9” x 13” (23 cm x 33 cm) baking dish with parchment paper, overlapping the sides for easy removal.
  2. Combine flour, icing sugar, salt and grated butter in large bowl. Using your clean hands, combine mixture until it resembles coarse crumbs. (grating the butter allows easy mixing)
  3. Transfer mixture into prepared pan and press firmly onto the bottom of the pan.
  4. Bake in preheated oven 18 to 20 minutes, until edges are golden.
  5. Filling: While the crust is baking make the filling. In a large bowl beat the eggs with a hand held whisk until they are well mixed. Add the sugar and beat until fully incorporated. Add flour and baking powder. Whisk in grapefruit juice and zest. Gently fold in berries.
  6. Pour filling over hot crust and bake for additional 23 to 25 minutes, or until filling has set. Cool on wire cooling rack.
  7. Glaze: Combine icing sugar and enough grapefruit juice to make the glaze. Drizzle over cooled squares.
