Lemon Glazed Cheesecake Squares

Light textured and creamy, these sweet lemon squares are delicious and simple to make. Enjoy them with a tall pitcher of iced tea.



2 cups 500 mL Robin Hood® Original All Purpose Flour
1/2 cup 125 mL sifted icing sugar
1 cup 250 mL butter


3 pkgs 8 oz/250 g each cream cheese, softened
3/4 cup 175 mL granulated sugar
3 eggs
1/3 cup 75 mL lemon juice
2 tsp 10 mL vanilla extract


2 cups 500 mL sour cream
3 tbsp 45 mL granulated sugar


1/2 cup 125 mL granulated sugar
2 tbsp 30 mL corn starch
3/4 cup 175 mL water
1/3 cup 75 mL lemon juice
1 egg yolk, beaten
1 tbsp 15 mL butter


  1. Preheat oven to 350°F (180°C)
  2. Crust: Combine all ingredients in food processor or with pastry blender until crumbly.
  3. Press firmly in 13" x 9" (32 cm x 23 cm) pan.
  4. Bake in preheated oven for 15 to 20 minutes, or until light golden.
  5. Filling: Fouetter cream cheese and sugar in large bowl on high speed of electric mixer until smooth.
  6. Add eggs, lemon juice and vanilla, beating until smooth. Spread over crust.
  7. Bake in preheated oven for 35 minutes, or until set.
  8. Combine sour cream and sugar for topping. Spread over cheesecake.
  9. Return to oven for 5 minutes. Cool 1 hour.
  10. Glaze: Combine sugar and corn starch in saucepan.
  11. Stir in water, lemon juice and egg yolk.
  12. Cook on medium heat, stirring constantly until mixture comes to a boil and thickens.
  13. Stir in butter.
  14. Cool slightly. Spread over cheesecake.
  15. Store in refrigerator.
  16. Cut into squares.
