Chocolaty Chewy Brownies

These soft and chewy brownies made with our Omega-3 and Fibre flour blend, are a chocolaty delight!


2½ cups 625 mL Robin Hood® Nutri Flour Blend™ Omega-3 & Fibre
¾ cup 175 mL cocoa powder
2 tsp 10 mL baking powder
½ tsp 1 mL salt
½ tsp 1 mL finely ground instant coffee (optional)
¼ cup 50 mL butter, melted
1 cup 250 mL packed brown sugar
¾ cup 175 mL granulated sugar
2 eggs
1 cup 250 mL unsweetened applesauce
2 tsp 10 mL vanilla extra
½ cup 125 mL semi-sweet chocolate chips


  1. Preheat oven to 350°F (180°C). Grease and line a 9” x 13” (3 L) baking dish with parchment paper, overlapping 2 sides for easy removal.
  2. Combine flour, cocoa powder, baking powder, salt and instant coffee in a medium bowl.
  3. Whisk butter, sugar and eggs in a separate medium bowl.  Add applesauce and vanilla. Whisk until incorporated into batter. Stir in flour mixture and chocolate chips. 
  4. Spoon batter into prepared pan. Bake in preheated oven 20 to25 minutes. Center should still be soft.  Cool on wire cooling rack.
