These crisp oatmeal cookies made with brown sugar are so good, they’ll have you saying “aye” in approval.

Ingredients

1 cup 250 mL Robin Hood® Original All Purpose Flour
2 cups 500 mL Robin Hood Oats
1 1/2 tsp 7 mL baking soda
1 cup 250 mL finely chopped nuts
1 cup 250 mL butter
1 cup 250 mL packed brown sugar
1 tsp 5 mL vanilla extract

Directions

  1. Preheat oven to 350ºF (180ºC). Grease and line a 15” x 10” x 1” (38 cm x 25 cm x 2.5 cm) jelly-roll pan with parchment paper, overlapping two sides for easy removal.
  2. Combine flour, oats, baking soda and nuts in a large mixing bowl. Stir well to blend.
  3. Melt butter, brown sugar and vanilla together in large saucepan. Stir in flour mixture. Mix thoroughly.
  4. Press mixture into prepared jelly-roll pan.
  5. Bake in preheated oven for 20 minutes or until golden. Cut into 1” (2.5 cm) squares while warm.
