Made it healthier, turned out great

Changed sugar for splenda. CHanged brown sugar for truvia "brown sugar blend" Replace the oil with 1/2 cup olive oil + 1/2 apple sauce unsweetened. Very happy with this recipe and changes. Amazing texture ! Can't tell it's gluten free and no added sugar. Wanted to upload a photo but it doesn't work....

Changed a few things but very good.

Used 1/2 cup of oil, added 1/2 of apple sauce, 1 small mashed banana, extra 1/2 of carrot and two handfuls of raisins. Put them in muffin tins. I have made them twice and the whole family loves them.

Baking Powder?

Ingredient list calls for 2 tsp (10 mL) baking powder but it doesn't show up in the directions.

Gluten free Carrot Cake

I can believe it is not Gluten Free Carrot Cake!! What a dry crumbly horrible tasting hot mess!!!! Disappointed :(
