• Bread Flour

  • 'Bread Flour' is recommended for use in bread because it has a higher protein content, which forms more gluten during kneading. For a different consistency, try making bread with All-Purpose Flour. The bread doesn't rise as high and it's denser, but it's still good.

  • Cleaning The Bread Pan

  • Don't use sharp utensils to pry stuck bread from the bread pan (use a rubber spatula), and during the clean-up avoid using abrasive cleansers or scouring pads. This will protect the special non-stick surface that bread pans are usually coated with for easy clean-up.

  • Crust Colour Setting

  • The Crust Colour Setting allows you to choose a light, medium or dark crust by slightly varying the baking time or temperature. The higher your machine temperature and the longer the baking time, the darker the crust.

  • Delay Timer Cycle

  • Place ingredients in bread pan as directed by manufacturer. Do not use delay timer for breads containing perishables (such as eggs and fresh milk) which can spoil in less than two hours.

  • Dough Cycle/Manual Cycle

  • Use the Dough Cycle/Manual Cycle setting to make rolls, breadsticks, pizza dough or any breads that require hand shaping. This setting will mix, knead and allow dough to rise only once. The beep is your cue to remove the dough from the machine and begin hand shaping. Then let the bread rise in a warm place and bake in a conventional oven.

  • Raisin/Nut Cycle

  • The Raisin/Nut Cycle setting is designed to accommodate extra ingredients such as fruits, nuts and vegetables. Ingredients added too late will not have enough time to fold into the dough and may clump together. Draining or dusting extra ingredients with flour or cinnamon first will help them separate and mix into the dough.

  • Stuck Dough Beater

  • Greasing the dough beater shaft with shortening, or coating with a cooking spray before installing the beater will make for easy clean-up. Soaking the beater in warm water for a few minutes after removing the bread can help loosen any baked-on ingredients.

  • Sweet Setting

  • The Sweet Setting is for breads with a higher sugar content that tend to brown easily and rise slowly. This setting features a longer rising time and lower baking temperature. Use the Light Crust Colour on your machine if you do not have a Sweet Setting.

  • Whole Wheat Setting

  • The Whole Wheat Setting features a longer rising time and is designed to efficiently knead whole-grain flours which are heavier than refined flours.
