Instead of toast and jam for breakfast, try these all-natural Banana Bran Muffins. They're full of fibre so they're good for you. With a hint of cinnamon and sweet banana, they taste good too.

1 1/2 cups

natural bran

375 mL

1 cup

ROBIN HOOD® All Purpose Flour

250 mL

1/2 cup

brown sugar, packed

125 mL

1 1/2 tsp

baking powder

7 mL

1/2 tsp

baking soda

2 mL

1/4 tsp

salt

1 mL

1 tsp

cinnamon

5 mL

1/2 cup

nuts, chopped (optional)

125 mL

2

egg

2

1 cup

banana, mashed

250 mL

1/2 cup

milk

125 mL

1/2 cup

margarine, melted

125 mL

 

Preparation


COMBINE first 7 dry ingredients in large bowl.


STIR in nuts.


BEAT remaining ingredients in small bowl.


Add banana mixture to dry ingredients, stirring until just combined.


Spoon into greased or paper lined muffin cups.


BAKE at 400°F (200°C) for 18 to 20 minutes, or until top springs back when lightly touched.
