Spicy Corn Bread

This mouth-watering corn bread tastes absolutely delicious with anything on the barbecue. A jalapeno pepper makes it nice and spicy, while smoked mozzarella cheese adds extra flavour.


1 cup 250mL Robin Hood® Original All Purpose Flour
¾ cup 175mL cornmeal
¼ cup 50mL granulated sugar
1 ½ tsp 7mL baking powder
½ tsp 2mL baking soda
½ tsp 2mL salt
1 ¼ cup 300mL buttermilk
2 eggs
¼ cup 50mL Crisco® Vegetable or Canola Oil
1 cup 250mL corn, fresh or frozen
1 cup 250mL grated smoked mozzarella
1 jalapeno pepper, finely chopped


  1. Preheat oven to 375ºF (190ºC). Grease a 9” x 9” (2.5 L). baking dish.
  2. Combine flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl. In a separate large bowl, whisk together buttermilk, eggs and oil. Add wet ingredients to dry ingredients. Stir just until combined. Stir in corn, smoked mozzarella and jalapeno.
  3. Pour batter into prepared baking dish.
  4. Bake in preheated oven 35 to 40 minutes or until a toothpick inserted in centre of bread comes out clean.


  • You can replace the smoked mozzarella with cheddar, regular mozzarella or any of your favourite cheeses.
  • You can omit the jalapeno pepper if desired.
