Deliciously sweet, this loaf combines spicy cinnamon, ground nutmeg and plump raisins for a taste that is delicious any time of year.

Ingredients

1 1/4 cups 300 mL water
1 cup 250 mL packed brown sugar
1 cup 250 mL raisins
1/2 cup 125 mL Crisco® All Vegetable shortening
1 tsp 5 mL cinnamon
1/2 tsp 2 mL allspice
1/2 tsp 2 mL nutmeg
2 cups 500 mL Robin Hood® Original All Purpose Flour
1 tsp 5 mL baking soda
1 tsp 5 mL baking powder
1/2 tsp 2 mL salt

Directions

  1. Preheat oven to 350ºF (180ºC). Grease a 9” x 5” (23 cm x 13 cm) loaf pan.
  2. Combine water, sugar, raisins, shortening and spices in a medium saucepan. Bring to a boil over medium heat. Boil for 5 minutes.
  3. Remove from heat and cool to room temperature.
  4. Add the remaining ingredients to the raisin mixture and stir well. Pour into prepared pan.
  5. Bake in preheated oven for 45 to 50 minutes or until firm.
  6. Cool for 30 minutes, then remove from pan and cool completely on a cooling rack.
