Peanut Butter and Banana Muffins

Enjoy the incredible combination of peanut butter and banana in every bite of these great tasting muffins. They’re great at the breakfast table and beyond.

Ingredients

1 1/2 cups 375 mL Robin Hood® Original All Purpose Flour
1/2 cup 125 mL sugar
1 tsp 5 mL baking powder
1 tsp 5 mL baking soda
1/2 tsp 2 mL salt
1 egg
1/2 cup 125 mL butter, melted
1 1/2 cups 375 mL mashed banana
1 pkg 300 g peanut butter chips, divided

Directions

  1. Preheat oven to 375°F (190°C). Grease or line 12 muffin cups with paper liners. 
  2. Combine first 5 dry ingredients in large bowl. In a separate large bowl, beat egg, melted butter and mashed bananas together thoroughly.
  3. Add banana mixture to dry ingredients, stirring just until moistened. Stir in 1 1/4 cups (300 mL) peanut butter chips. Fill prepared muffin cups sprayed with a non-stick spray.
  4. Sprinkle remaining peanut butter chips on top.
  5. Bake in preheated oven for 20 to 25 minutes, or until tops are firm to touch.
