Mirror Glaze

Makes:about 1 ½ cups (375mL)

Ingredients

½ cup 125mL water
2 tbsp 30mL powdered gelatin
2/3 cup 150mL Eagle Brand® Sweetened Condensed Milk
1 ½ cups 375mL sugar
½ cup 125mL water
2 cups 500mL white chocolate chips
Food colouring

Directions

  1. Combine ½ cup (125mL) water with gelatin in small bowl. Set aside.
  2. Place white chocolate chips in large bowl. Set aside.
  3. Combine sweetened condensed milk, sugar and remaining ½ cup (125mL) water in small saucepan. Cook over low heat, stirring constantly with a spatula until mixture begins to simmer. Remove from heat and stir in gelatin mixture.
  4. Pour hot mixture over chocolate chips and let sit until melted. Stir very gently ensuring that no air bubbles appear.
  5. Stir in desired gel colour. Cool to 90°F (37°C) and pour over frozen iced cake.
