Dried Fruit Oat Cookies

Makes:about 42 cookies

These chewy treats are chock full of tangy cranberries, chewy apricots, pineapple chunks and hearty oats. Pack some for your next weekend hike or picnic.


3/4 cup 175 mL butter, softened
3/4 cup 175 mL packed brown sugar
1/2 cup 125 mL granulated sugar
1 egg
2 tbsp 30 mL water
2 tsp 10 mL vanilla extract
3/4 cup 175 mL Robin Hood® All Purpose Unbleached Flour
3/4 tsp 3 mL baking soda
1 tsp 5 mL cinnamon
2 1/2 cups 625 mL Robin Hood Oats
3/4 cup 175 mL dried cranberries
1/2 cup 125 mL chopped dried apricots
1/2 cup 125 mL chopped dried pineapple


  1. Preheat oven to 350ºF (180ºC). Line baking sheets with parchment paper. 
  2. Cream first 6 ingredients together on medium speed of electric mixer until light and creamy. Combine flour and soda. Add to creamed mixture, beating on low speed until blended. Stir in oats and dried fruits. Drop dough by heaping spoonfuls onto prepared baking sheets.
  3. Bake in preheated oven for 12 to 15 minutes, or until light golden. Don't overbake.
