Crispy Oat Sandwich Wafers

How do you make delicious oat wafers even better? This tasty recipe sandwiches two of them together with a sweet layer of melted chocolate chips.


2/3 cup 150 mL butter
1 cup 250 mL sugar
2 cups 500 mL Robin Hood® Oats
2/3 cup 150 mL Robin Hood  Original All Purpose Flour
1/4 cup 50 mL corn syrup
1/4 cup 50 mL milk
1 pkg 300 g white, semi-sweet or milk chocolate chips, melted


  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Melt butter in medium saucepan. Remove from heat. Stir in remaining ingredients except chocolate chips. Mix well.
  3. Drop mixture by level teaspoonfuls (5 mL), 2” (5 cm) apart, onto prepared baking sheets. Press down slightly.
  4. Bake in preheated oven for 7 to 9 minutes, or until golden. Cool completely on baking sheet before removing.
  5. Spread thin layer of melted chocolate on flat side of half the cooled cookies. Top with remaining cookies to make a sandwich placing flat side on the chocolate.


  • To melt chocolate, bring 1-2” (2.5 cm-5 cm) of water to a boil in a medium saucepan. Place chocolate in heat proof bowl and place bowl over boiling water. Ensure bottom of bowl does not touch the water. Remove saucepan from heat. Let stand 3-5 minutes and stir.
