These cookies are easy to bake, pack and eat, and make for a great lunchbox treat! With crisp rice cereal and chewy coconut, they have just the right amount of crunch and sweetness.

Ingredients

1 cup 250 mL butter, softened
1 cup 250 mL packed brown sugar
1 cup 250 mL sugar
2 eggs
2 tsp 10 mL vanilla extract
1 1/2 cups 375 mL Robin Hood® Original All Purpose Flour
1 tsp 5 mL baking powder
1 tsp 5 mL baking soda
2 cups 500 mL Robin Hood Oats
2 cups 500 mL puffed rice cereal
1 cup 250 mL flaked coconut

Directions

  1. Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
  2. Cream butter, sugars, eggs and vanilla together in a large mixing bowl.
  3. Combine flour, baking powder, soda and oats in a separate large mixing bowl.  Stir into butter mixture. Mix well. Stir in rice cereal and coconut.
  4. Drop dough by spoonfuls onto prepared baking sheets.
  5. Bake in preheated oven for 10 to 12 minutes, or until light golden. Don't overbake. Cool on wire rack.
