Butterscotch Honey Cereal Crunchies

With sweet honey, rich butterscotch and corn flake cereal, these creative crunchies would be a welcome surprise in any kid’s lunchbox.

Ingredients

2 cups 500 mL Robin Hood® Original All Purpose Flour
1 tsp. 5 mL baking soda
1/2 tsp. 2 mL baking powder
1 cup 250 mL butter, softened
1/2 cup 125 mL granulated sugar
1/2 cup 125 mL packed brown sugar
1/3 cup 75 mL honey
1 egg
1 pkg 300 g butterscotch chips
2 cups 500 mL corn flake cereal, slightly crushed
2 cups 500 mL crisp rice cereal
1 cup 250 mL flaked coconut

Directions

  1. Preheat oven to 350ºF (180ºC). Line baking sheets with parchment paper.
  2. Combine flour, baking soda and baking powder in a medium mixing bowl.
  3. Beat butter, sugars, honey and egg together thoroughly in a separate mixing bowl. Add flour mixture to butter mixture, mixing well. Stir in remaining ingredients.
  4. Drop dough by tablespoonfuls (15 mL) on prepared baking sheet.
  5. Bake in preheated oven 8 to10 minutes, or until golden. Cool 5 minutes, then remove to rack and cool completely.
