Chocolate Chip Tube Cake

This traditional cake is filled with tasty chocolate chips and dusted with sweet icing sugar. No Bundt pan? No problem! You can also bake it in bread pans.

Ingredients

1 cup 250 mL butter, softened
1 1/2 cups 375 mL granulated sugar
4 eggs
2 tsp 10 mL vanilla extract
3/4 cup 175 mL buttermilk or sour milk
3 cups 750 mL Robin Hood® Original All Purpose Flour
1 tsp 5 mL baking powder
1 tsp 5 mL baking soda
1/4 tsp 1 mL salt
1 cup 250 mL semi-sweet chocolate chips
Icing sugar, optional

Directions

  1. Preheat oven to 350 ºF (180 ºC). Grease a 10" (4L) tube pan.
  2. Cream butter and sugar in large bowl of electric mixer until light and fluffy. Add eggs and vanilla. Beat well. Add buttermilk and stir until combined.
  3. Add flour, baking powder, baking soda and salt. Mix well. Fold in chocolate chips.
  4. Pour batter into prepared pan.
  5. Bake in preheated oven for 45 to 50 minutes or until toothpick inserted in centre comes out clean. Cool in pan for 15 minutes. Invert onto cake plate and cool completely. Dust with icing sugar.
