Chewy Butterscotch Squares

Every bite of these chewy squares is filled with delicious nuts and topped with irresistible coconut. They’re great for lunchtime snacks!

Ingredients

¼ cup 50 mL butter, melted
1 cup 250 mL packed brown sugar
1 egg
1 tsp 5 mL vanilla extract
¾ cup 175 mL Robin Hood® Original All Purpose Flour
1 tsp 5 mL baking powder
¼ tsp 1 mL salt
1/3 cup 75 mL chopped nuts (pecans, almonds, walnuts)
1/3 cup 75 mL coconut

Directions

  1. Preheat oven to 350°F (180°C). Grease and line an 8” (2L) baking dish with parchment paper overlapping 2 sides for easy removal.
  2. Stir melted butter, brown sugar, egg and vanilla extract until smooth.
  3. Add remaining ingredients. Mix well.
  4. Spread mixture evenly in prepared pan.
  5. Bake in preheated oven for 20 to 25 minutes, or until light golden. Don't overbake for chewy squares.
