Ooey, gooey and delightfully chewy, these butterscotch bars are bursting with cashews and delicious flavour.

1/2 cup 125 mL granulated sugar
3/4 cup 175 mL butter, softened

Topping

4 eggs
1 cup 250 mL corn syrup
1 cup 250 mL granulated sugar
1 pkg 300 g butterscotch chips
1/4 cup 50 mL butter, melted
1 1/3 cups 325 mL halved cashews

  4. Topping: Beat eggs, sugar, corn syrup and melted butter until blended. Stir in butterscotch chips and cashews. Pour evenly over crust.
