There’s a delicious chocolate and caramel surprise in every one of these delightful cupcakes. You’ll know when your kids find it by the smiles on their faces.

Ingredients

1 egg
½ cup 125mL granulated sugar
1 tsp 5mL vanilla extract
½ cup 125mL Crisco® Vegetable or Canola Oil
¼ cup 50mL plain yogurt
1 cup + 2 tbsp 250mL + 30mL Robin Hood® Original All Purpose Flour
¼ cup 50mL cocoa powder
¾ tsp 4mL baking powder
¾ tsp 4mL baking soda
½ cup 125mL boiling water
24 caramel filled chocolates

Directions

  1. Preheat oven to 350°F (180°C). Grease or line a mini-muffin pan with 24 paper liners.
  2. Beat, in a large bowl, egg, sugar and vanilla until combined. Add oil and yogurt. Add next 4 ingredients. Mix until well combined. Carefully fold in boiling water until batter is smooth.
  3. Place 1 tbsp (15 mL) of batter in each paper liner.
  4. Tip

    Do your kids know how many tsp. make up a ½ tbsp.? Show them that it’s the same as 1 1/2 tsp.

    Tip

    Have your kids add their own personal touch to the baked goodies by choosing cupcake liners in their favourite colour.

  5. Place 1 square of caramel filled milk chocolate bar over batter. Top with additional ½ tbsp (7.5 mL) of batter.
  6. Tip

    Your kids will have a great time carefully dropping the caramels into the batter to create the delicious surprise.

  7. Bake in preheated oven for 12 minutes.
