Food Processor Orange Cake

Ingredients:

1 (1) large seedless orange
3/4 cup (175 mL) butter, cubed
1 1/2 cups (375 mL) granulated sugar
3 (3) eggs
2 cups (500 mL) ROBIN HOOD® All Purpose Flour
2 tsp (10 mL) baking powder
1/4 tsp (1 mL) salt

Directions:

1. Cut orange into quarters; do not peel. Process in food processor until fine, about 20 seconds. Add butter, sugar and eggs. Process until well mixed, about 2 minutes. Scrape down sides of bowl occasionally.
2. Add remaining ingredients and process with 3 or 4 quick on/off turns, just until flour disappears.
3. Pour batter into greased 9" (2 L) square cake pan. Bake at 350ºF (180ºC) for 40 to 45 minutes or until cake tests done.
4. Cool completely, then frost with Orange Butter Icing.

I made this cake for a co-worker's birthday. He specified that he didn't want a chocolate cake and I wanted something that I didn't have to go to the store to get ingredients. This fit the bill plus it was so quick. I would say it took less time than the 15 minutes the recipes says it will take to prepare.

I'm diabetic and make this cake with a sugar substitute. It is by far the best and most conveniant cake to make, as I always seem to have the ingredients on hand, and the fact that it only uses one bowl makes cleanup a snap. I sometimes add 1/3 cup poppy seeds and usually make it in a bundt ring. It looks terrific and is by far our favourite dessert!

The cake was delicious with a very good orange flavour. It was easy to make. I tried it with the orange butter frosting, it was very good.

This cake is the easiest cake I have ever made. No one who tastes it beleives how easy it is to make. I use a siicone bunt form and either sprinkle icing sugar powder on it or drizzle icing sugar with a little orange juice on top of it. I using seedless oranges with thinner skins works best.
