Ingredients

  • Cupcakes
  • ¼ cup butter, softened
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ¾ cup Robin Hood® Original All Purpose Flour
  • ½ tsp baking powder
  • Pinch salt
  • 1/3 cup milk
  • Vanilla Icing
  • ¼ cup butter, softened
  • 3 cups icing sugar
  • ¼ cup milk
  • ½ tsp vanilla extract

  • Preheat oven to 350°F (180°C). Line cupcake pan with paper liners.
  • Cupcakes: Beat butter and sugar in large mixing bowl until light. Add egg and vanilla. Beat well.
  • Combine flour, baking powder and salt in a separate small bowl. Stir with a fork. Add half the flour mixture to the wet ingredients. Add milk and then the remaining dry ingredients. Stir.
  • Use an ice cream scoop to place batter into prepared pan.
  • Bake in a preheated oven, 22 to 25 minutes, or until a toothpick inserted into centre of cupcake comes out clean. Cool in pan 10 minutes before removing. Cool cupcakes on wire rack before decorating.
  • Icing: Place butter, 1 ½ cups (375mL) icing sugar, milk and vanilla in a bowl. Mix with hand held mixer.
  • Beat for 5 minutes. Add remaining icing sugar ½ cup (125mL) at a time, beating for ½ minute each addition.
