  • 1 pkg Robin Hood® Banana or Gluten Free Banana Flavoured Quick Bread Mix
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 cup unflavoured yogurt
  • 1/3 cup Crisco® Vegetable or Canola Oil
  • 2 eggs
  • 1 cup finely grated carrots

  • Preheat oven to 375°F (190°C).  Grease or line muffin cups with paper liners.
  • Combine quick bread mix, cinnamon and nutmeg in a large mixing bowl.  Stir to combine. Mix in yogurt, oil and eggs until combined. Stir in carrots.
  • Spoon batter into prepared muffin cups.
  • Bake in preheated oven 20 to 22 minutes or until toothpick inserted in center of muffin comes out clean. Cool for 5 minutes in pan on wire cooling rack. Remove from pan and continue cooling on wire cooling rack.
